RECIPE FOR COMPETITION HONEY CAKE

                        HONEY SULTANA CAKE

 

Ingredients:      240g. (8oz) Self raising flour

                         120g. (4oz) Butter

                         180g. (6oz) Honey

                         Two large eggs

                         180g. (6oz) Sultanas

                         1 pinch of salt

                         1 pinch baking soda

 

Method:  Preheat oven 160°C  (fan oven) Cream honey and butter until soft

               Add beaten eggs, mix thoroughly with little flour if necessary. Sift

               together flour, salt and baking soda and fold into mixture and shake

               Some over sultanas. Fold in sultanas. Turn into prepared 61/2’’-71/2’’

                     Tin. Bake in oven for 20mins, then lower temperature to 150°C for a

              Further 40mins. Or until baked.
